Ribatejo is a Portuguese province rich in fertile fields, where the cattle lives happily and the fish is fresh; and the same is true for its capital, Santarém. Sited between the river Tejo and the lezíria flood plains, there are plenty of sources to tap for good food, be it for eels to fry or to stew, tasty lamprey, or shad with bread broth. Wild bull meat, among the many species that graze in this area, is a major attraction, usually served along the typical migas (fried breadcrumbs) from Ribatejo.
